Our Plov is cooked in the traditional “Kazan” style, where layers of flavor are built slowly to ensure every grain of rice is separate, fluffy, and infused with the essence of the meat and spices.
The Meat: Premium chunks of lamb (or beef), slow-braised until they are “spoon-tender” and melt into the rice.
The Rice: High-quality long-grain rice, meticulously washed and steamed to achieve the perfect “al dente” texture—never mushy.
The Aromatics: A fragrant blend of dark cumin, sweet yellow and orange carrots, and tart barberries (Zereshk) that provide a sophisticated burst of acidity.
The Signature: Each portion is served with a whole head of roasted, “butter-soft” garlic and a traditional side of Achichuk (a spicy tomato and onion salad) to cut through the richness.
