Our Tteokbokki is all about the “Chew.” We use high-grade, short-grain rice cakes that provide the perfect resistance, smothered in a sauce that balances heat, sweetness, and deep umami.
The Sauce: A complex base made from dried anchovy and kelp broth, reduced with premium Gochujang and a touch of local Phu Quoc honey for a glossy, rich finish.
The Texture: Soft, pillowy rice cakes (Tteok) paired with thin, savory sheets of Busan-style fish cakes (Eomuk).
The Toppings: Garnished with fresh scallions, a sprinkle of toasted sesame seeds, and a perfectly jammy soft-boiled egg to cut through the spice.
Chef’s Note: This dish is famously spicy. If you’re a fan of the ‘K-Drama’ style, we highly recommend adding the Mozzarella melt upgrade for that legendary cheese pull.
